Beauty at Burnham Beeches

Our 2015 Year of Beauty season has been made that much more special by our year-long collaboration with Shannon Bennett’s stable of spectacular restaurants and marvellously creative chefs. To top off this series of made-in-heaven matches between our 2015 ballets and the dishes they inspired, we took Principal Artist Lana Jones – who will shortly dance Aurora in the global premiere of David McAllister’s The Sleeping Beauty – to Bennett’s Burnham Beeches, where the Deco mansion awaits its transformation into a luxury hotel. Where better for Aurora to roam in her dream, running her fingertips along the bannisters, fluttering amongst the mountain flowers?

Atop the dessert is a tempered disc of Valrhona chocolate, feather-touched with gold dust – a reflection of Gabriela Tylesova’s lavish design for The Sleeping Beauty. It’s adorned with a quenelle of lavender sorbet, made with flowers from the Piggery’s garden, its delicate colour evoking the presence of the Lilac Fairy.

When Joel rings the disc with a Valrhona chocolate caramel, it melts to reveal what is “sleeping” beneath – a scrumptious crumbling of Shannon Bennett’s signature pistachio cupcake and a rich Valrhona mousse. The melting, the swooning fall into a sweet harmonious union – Joel was inspired by the love story at the heart of The Sleeping Beauty.
